Gluten free Nutella Holiday Cookies
For the upcoming holidays, I’d like to share my kids’ favorite cookie recipe. You’ll need just a few ingredients and your favorite chocolate hazelnut spread. My twin boys love Nutella.
INGREDIENTS
- HEALTH BENEFITS:
- Coconut sugar - low glycemic index. It doesn’t raise blood sugar levels rapidly.
- Oats - rich in fiber which promotes healthy gut bacteria and regulates blood sugar levels.
- Walnuts - high in heart healthy omega 3 fatty acids.
- 4 tbsp butter, softened
- 2 tbsp coconut sugar
- 1 tsp vanilla
- 1 cup walnuts, ground coarsely
- 1 1/3 cup oats, ground
- 1/3 c walnut pieces ( for dipping in Nutella)
- 1/4 c Nutella
HOW TO MAKE GLUTEN FREE NUTELLA HOLIDAY COOKIES
- Beat the butter and sugar together. Add the vanilla, and beat until incorporated. Add both the walnuts and oat flour and beat until mixed well.

- Put the dough in the fridge to chill for about 30 minutes.
- Take about a tablespoon of dough, spread it out in the palm of your hand, dip a walnut piece in Nutella, and put it in the middle of the dough. Shape it into a ball.
- Let the cookies chill in the freezer for about 10 min.
- Preheat the oven to 325 C.
- Bake the cookies for 8 min on the lower rack. Move the cookie tray to the upper rack and bake for another 6 min.
- Let cookies cool for about 5 min and dust with powdered sugar.
